Having a stable air conditioner is crucial in a commercial kitchen

My friend began a commercial meal prepping business last year and it’s been a huge hit! She makes all sorts of healthy and delicious meals, and her prices are pretty affordable in my opinion.

I also cook a lot and have been thinking about opening a food truck.

She gave me a tour of her commercial kitchen to see how I like it. One of the biggest annoyances about her kitchen is that the air conditioner is super wonky. The landlord makes her turn off the air conditioner when she leaves for the day, and this is annoying because it really does get a little warmer overnight. Because she is storing food in there, she really needs the air conditioner to constantly be on so that nothing spoils. Luckily she has a great refrigerator and freezer so nothing has spoiled yet, but it would still be helpful for the appliances that the air conditioner stays on. The other thing that is annoying about the AC being off is that when she arrives the next day, it takes more than an hour for the temperature to fully stabilize and get cool again. That means that she is warm and sweating as she preps for the day and waits for the air conditioner to stabilize. I can imagine this being especially challenging during the summer months, so I told her that she should speak to her landlord about this air conditioning rule. It doesn’t make sense to turn off a commercial air conditioner every single day. I don’t even think that turning it off saves money or provides any sense of efficiency.
